By the way - Do you know the difference between the famous German Wiener Schnitzel and Schnitzel Wiener Art? For a Schnitzel to be called Wiener Schnitzel, it must be made from veal. A Schnitzel Wiener Art, on the other hand, refers to a breaded pork Schnitzel.
Are there quality differences in veal?
We guarantee that our veal is of the best possible grade. The colour of the meat determines its quality; our breeder defines three different grades:
• Light red meat is awarded the bronze seal: Calves of this grade were largely fed on grass from succulent pastures.
• Light pink veal receives the silver seal. This meat is particularly suitable for haute cuisine.
• Only the finest white meat is distinguished with the gold seal. Calves of this quality grade spend approximately 26 weeks eating only a mixture of corn, barley and meat that is perfectly adjusted to their natural requirements.
